Viral Giant Tofu Summer Rolls

This giant summer roll is loaded with crispy panko tofu, crunchy vegetables, creamy avocado and protein-rich edamame, all wrapped in soft rice paper and served with a spicy peanut dipping sauce. Fresh, colourful and packed with texture, it's a fun take on the viral recipe trend that's perfect for sharing, meal prepping or enjoying as a light yet satisfying lunch.

Ingredients

3 large rice paper wraps

1 large iceberg lettuce leaf

50g carrots, sliced into matchsticks

50g cucumber, sliced into matchsticks

50g purple cabbage, thinly sliced

50g Biona Organic Edamame Beans, drained 

1/2 avocado, thinly sliced

100g Biona Organic Firm Tofu

3 tbsp panko breadcrumbs

3 tbsp flour

1 tsp garlic powder

Salt and pepper, to taste 

Oil spray

1 tbsp chilli oil

2 tbsp Biona Organic Smooth Peanut Butter

1–2 tbsp Biona Organic Coconut Aminos

1 tsp mirin

Splash of water, to loosen

 

Method


  1. Slice the tofu into strips. 
  2. Mix the flour, garlic powder, salt and pepper in one bowl and add the panko breadcrumbs to a separate bowl.
  3. Dip each tofu strip into the seasoned flour, then coat in the panko breadcrumbs.
  4. Place the tofu in an air fryer or on an oven tray, spray with oil and cook at 200°C for 20–25 mins until golden and crispy.
  5. While the tofu cooks, slice the avocado and make the dipping sauce. Mix the chilli oil, peanut butter, coconut aminos, mirin and a splash of water together until smooth and easy to drizzle. Set aside.
  6. Soften the rice paper wraps one at a time in a plate of warm water, then overlap all 3 slightly on a clean surface to create one large wrap.
  7. Place the iceberg lettuce leaf in the centre of the rice paper, then layer with the carrots, cucumber, cabbage, edamame, avocado and crispy tofu.
  8. Fold in the sides, then roll tightly from the bottom up to create one giant summer roll.
  9. Slice the summer roll in half and serve with the spicy peanut dipping sauce.
