Homemade Blueberry Compote and Almond Butter on Toast

This simple blueberry compote toast is the perfect way to use up your berries in a balanced breakfast or snack. Sweet, jammy blueberry compote is layered over creamy yoghurt on Biona Organic Chia & Flax Rye Bread for a nourishing combination of protein, fibre and healthy fats. It’s a great one to keep you fuelled through to your next meal and it uses up those slightly over-ripe berries in the fridge!

Protein: 14g per slice
Fibre: 11g per slice

Ingredients

350g fresh blueberries

120ml water

1 tsp Biona Organic Pure Amber Maple Syrup

1 tsp vanilla extract

2 tbsp thick greek yoghurt

1 tbsp Biona Organic Almond Butter

2 slices Biona Organic Chia & Flax Rye Bread

 

Method

  1. Add blueberries, water, vanilla and maple syrup to a small saucepan, stirring over medium heat for 10 mins.
  2. When it starts to boil, lower heat until your mixture is simmering for 5 minutes.
  3. Transfer the compote to a separate small bowl to cool for 15 minutes.
  4. Toast your rye bread.
  5. Top with yogurt, spoon over some of the blueberry compote and drizzle with almond butter to serve.
