Ingredients

180g oat flour

¼ tsp salt

1 tsp ground cinnamon

25g unsweetened cocoa powder

1 ½ tsp baking powder

125g mashed ripe banana

113g cooked beetroot, peeled

300ml Biona Organic Coconut Milk

10ml pure vanilla extract

45ml Biona Organic Pure Amber Maple Syrup

Oil for cooking

Method

  1. In a bowl, mix the oat flour, baking powder, cocoa powder, cinnamon and salt.
  2. In a blender, combine beetroot, vanilla, maple syrup, coconut milk and banana. Blend until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Heat a lightly oiled pan over medium heat. Spoon in small rounds of batter.
  5. Cook for 1½–2 minutes until the edges bubble and look dry, flip, and cook another 1½ minutes.
  6. Serve warm with berries, yoghurt and a drizzle of maple syrup.
