This High Protein Grilled Chilli Cheese Toast is a flavour-packed lunch with a nutritional boost. We took inspiration from Emily English’s High Protein Chilli Cheese toast and added our own twist, using our high protein Organic Power Protein Bread for the base! Creamy cottage cheese and mature cheddar melt together with spring onions, fresh chilli, and smoked paprika for a spicy, savoury hit. Finished with a drizzle of chilli crisp and a sprinkle of fresh coriander, each bite is satisfying, protein-rich, and perfect for on-the-go energy or a mid-day pick-me-up.

Ingredients

1 slice Biona Organic Power Protein Bread

2 tbsp cottage cheese (full fat or low)

25g grated mature cheddar

2 Spring onions (finely sliced)

½ green pepper (finely diced)

½ tsp Smoked Paprika

1 Small handful of coriander (chopped)

½ Fresh red chilli (finely chopped)

1 tsp Chilli crisp

Salt and pepper to taste

Method

  1. Mix the cottage cheese with cheddar, chopped spring onion, half of the chopped coriander, chopped green pepper, chopped fresh chilli and season with a crack of black pepper, smoked paprika and salt. 
  2. Toast the power protein bread for 5 minutes.
  3. Top onto your toasted protein bread. Airfry at 200°C for 8-10 minutes or bake in the oven on the fan and grill setting at 200°C for 10-12 minutes.
  4. Top with a drizzle of chilli crisp and a sprinkle of coriander and enjoy!
