Ingredients

1 tsp Biona Raw Virgin Coconut Oil

2 shallots, finely chopped

3 cloves garlic, finely chopped

1 tsp fresh ginger, finely chopped

2 tbsp tomato purée

1 tbsp curry powder

400g Biona Organic Butter Beans

250ml Biona Organic Coconut Milk

70g spinach, chopped

Juice of ½ lime

1 tsp chilli flakes

2 slices Biona Organic Rye Bread, toasted

Handful fresh coriander, for garnish

Method

  1. Heat the coconut oil in a large pan over medium heat. Add shallots, garlic, and ginger, and cook until soft and fragrant (about 5 minutes).
  2. Stir in the tomato purée with a splash of water, then add the curry powder and butter beans, coating everything evenly.
  3. Pour in the coconut milk, season with salt, and simmer gently for 2–3 minutes.
  4. Add the chopped spinach, lime juice, and chilli flakes, and stir to combine.
  5. Serve the masala butter beans over the toasted rye bread, topped with extra chilli flakes and fresh coriander.
