These no-bake Healthier Millionaire’s Shortbread Bars are a wholesome twist on the classic sweet treat we all know and love. With a nutty oat and almond base, a creamy cashew “caramel” layer, and a rich dark chocolate topping, this is the perfect sweet treat to boost your energy at any time of day. Made with Biona Organic Cashew Butter and Maple Syrup, they are naturally sweetened and so satisfying to eat. Easy to prepare and chill, they set into perfect squares for a snack, dessert, or lunchbox treat. Sprinkle with crushed cashews for added crunch.

Ingredients

Base Layer:

90g rolled oats

100g almond flour (or ground almonds)

3 tbsp Biona Organic Coconut Oil, melted 

2 tbsp Biona Organic Maple Syrup

Pinch of salt

 

Caramel Layer:

½ tsp pure vanilla extract

120g Biona Organic Cashew Butter

4 tbsp Biona Organic Maple Syrup

Pinch of salt


Chocolate Layer:

80 g dark chocolate (70–85%)

1 tsp Biona Organic Coconut Oil

Handful of crushed cashews

Method

1. Mix the oats, almond flour, melted coconut oil, maple syrup, and a pinch of salt until sticky.

 

2. Press firmly into a lined loaf tin. Chill in the fridge for 30 minutes.

 

3. Make the caramel layer by combining the cashew butter, maple syrup vanilla extract and a pinch of salt in a bowl. Pour over the chilled base and spread evenly. Chill in the fridge for another 15–20 minutes.

 

4. Finish by making the chocolate layer. Melt the dark chocolate with the coconut oil and pour over the chilled layers. Use a spatula to even the surface. Sprinkle on a handful of crushed cashews and chill in the fridge until it sets (around 20 min). 

 

5. Cut into 12 squares and enjoy!
