Wicked-Inspired Raspberry and Pistachio Baked Oats

2 ripe bananas
200g rolled oats
60g vanilla protein powder
1 tsp baking powder
2 tbsp Biona Organic Pure Maple Syrup
420ml oat milk
140g frozen raspberries
3 tbsp pistachio cream
A handful of chopped pistachios
Drizzle of coconut yoghurt, for serving
Method
- Preheat the oven to 200/180°C fan. Lightly grease or line a baking dish (approx. 20 x 20 cm).
- In the dish, mash the bananas and mix with oats, protein powder, baking powder, maple syrup, and oat milk until combined.
- Dollop frozen raspberries and pistachio cream evenly across the mixture. Using a skewer, swirl gently to create a marbled effect.
- Bake for 35 mins, until golden and set. Remove from the oven and allow to cool slightly.
- Cut into 6 portions and top each slice with a drizzle of coconut yoghurt and a sprinkle of chopped pistachios. Then sit back and enjoy - your taste buds are in for a magical treat!
