Inspired by the enchanting green and pink tones of Elphaba and Glinda in Wicked, this baked oats recipe is pure breakfast magic. Ripe bananas and maple syrup bring natural sweetness, while rolled oats and vanilla protein powder make it hearty and wholesome. Swirls of pistachio cream and juicy raspberries create a marbled masterpiece that’s positively spellbinding. Baked until golden, each slice is soft, nutty, and bursting with fruity flavour. Finished with a drizzle of coconut yoghurt and a sprinkle of chopped pistachios, it’s a show-stopping treat that’ll make your taste buds sing.

Ingredients

2 ripe bananas 

200g rolled oats

60g vanilla protein powder

1 tsp baking powder

2 tbsp Biona Organic Pure Maple Syrup

420ml oat milk 

140g frozen raspberries

3 tbsp pistachio cream

A handful of chopped pistachios

Drizzle of coconut yoghurt, for serving

Method

  1. Preheat the oven to 200/180°C fan. Lightly grease or line a baking dish (approx. 20 x 20 cm).
  2. In the dish, mash the bananas and mix with oats, protein powder, baking powder, maple syrup, and oat milk until combined.
  3. Dollop frozen raspberries and pistachio cream evenly across the mixture. Using a skewer, swirl gently to create a marbled effect.
  4. Bake for 35 mins, until golden and set. Remove from the oven and allow to cool slightly.
  5. Cut into 6 portions and top each slice with a drizzle of coconut yoghurt and a sprinkle of chopped pistachios. Then sit back and enjoy - your taste buds are in for a magical treat!
