Vegan 'Duck' Pancakes

Why not opt for something savoury this pancake day? Our vegan duck pancakes are made with our new flavoured sweet and smoky jackfruit. Layer them up with cucumber and extra hoisin sauce for a delicious plant-based dinner.

Ingredients

1 can Biona Organic Sweet & Smoky Jackfruit.

2 tbsp Biona Organic Extra Virgin Olive Oil

2-3 tbsp Biona Organic Tamari Sauce

Chinese pancakes (or GF pancakes if needed)

hoisin sauce, to serve

1 cucumber, cored and cut into matchsticks

1 spring onion, cut into thin strips lengthwise

sesame seeds, to garnish (optional)

fresh coriander leaves, to garnish (optional)

Method

  1. Heat the olive oil in a frying pan over a medium heat. Tip the sweet & smoky jackfruit into a frying pan with the tamari sauce. Break up the jackfruit slightly and stir-fry until darker in colour and sticky.
  2. Warm up your pancakes in a bamboo steamer.
  3. Smear a little hoisin sauce on the inside of each pancake, followed by Jackfruit ‘duck’, cucumber and spring onion matchsticks.
  4. Sprinkle with sesame seeds and fresh coriander leaves for decoration. Roll up and enjoy!
