Marry Me Cannellini Beans

Ingredients

2 tbsp vegan butter

4 garlic cloves, minced

½ tsp smoked paprika 

½ tsp pepper 

½ tsp red pepper flakes

1 tsp sea salt 

¾ tsp oregano 

2 tins of Biona Cannellini Beans 

120ml vegetable broth 

180g spinach

1 jar of Biona Sundried Tomatoes 

1tbsp nutritional yeast

1 tbsp cornstarch 

280mL Biona Coconut Cream 

40g vegan parmesan 

Handful of fresh basil, chopped 

Toasted sourdough, sliced

Method

  1. Heat a large saucepan over medium heat, add in the butter, garlic and spices and cook for a minute. 
  2. Next add in the cannellini beans, vegetable broth, spinach, sundried tomatoes and nutritional yeast into the pan and leave to simmer.
  3. In a small bowl, add a splash of the vegetable broth and cornstarch, then mix until combined and no lumps remain. Then add into the pan, along with the coconut cream and cook for 5 minutes, until it has slightly thickened and creamy. 
  4. Finally, top with parmesan and fresh basil and serve with some toasted sourdough and enjoy!
