Easy Vegan Crepes
Ingredients
For crepes:
180g plain flour
1 tbsp cornstarch
1 tbsp Biona Coconut Sugar
¼ tsp salt
2 tbsp Biona Avocado Oil
240ml soy milk
240ml water
1 tbsp vegan butter
For topping:
Handful of strawberries
1 banana sliced
Method
- Whisk together flour, cornstarch, coconut sugar and salt in a large bowl. Next add the oil, soy milk and water, continuing to whisk until smooth.
- Heat a saucepan over medium heat and add the butter to the pan to melt. Once melted, add 3 tbsp of batter into the pan and spread around so the batter makes a thin circle.
- Cook for 2 minutes, then carefully flip the crepe and cook for another 30 seconds or until both sides are golden brown. Repeat this for the rest of the batter.
- Finally serve up your crepes with your favourite toppings and enjoy!
