Easy Vegan Crepes

Ingredients

For crepes:

180g plain flour 

1 tbsp cornstarch 

1 tbsp Biona Coconut Sugar

¼ tsp salt 

2 tbsp Biona Avocado Oil

240ml soy milk

240ml water

1 tbsp vegan butter

 

For topping:

Biona Lemon Juice 

Biona Pure Amber Maple Syrup

Biona Fruit Spread

Handful of strawberries

1 banana sliced

Method

  1. Whisk together flour, cornstarch, coconut sugar and salt in a large bowl. Next add the oil, soy milk and water, continuing to whisk until smooth. 
  2. Heat a saucepan over medium heat and add the butter to the pan to melt. Once melted, add 3 tbsp of batter into the pan and spread around so the batter makes a thin circle. 
  3. Cook for 2 minutes, then carefully flip the crepe and cook for another 30 seconds or until both sides are golden brown. Repeat this for the rest of the batter. 
  4. Finally serve up your crepes with your favourite toppings and enjoy!
