Base: Biona Rye Bread Chia & Flax
Edamame Spread:
200g edamame beans
1 tbsp Biona Whole Sesame Tahini
1-2 tbsp water
2 limes
1 tbsp chopped coriander
Salt and pepper
Toppings:
Edamame
Pickled red onions
Black sesame seeds
Chili oil
Whipped tofu:
300g Medium firm tofu
1 lemons
1 tbsp nutritional yeast
½ tsp sumac
¼ tsp garlic powder
½ tsp Maldon salt
1 tsp olive oil
Toppings:
Cherry tomatoes
Basil or mint
Biona Peranzana Black Italian Olives
Pickled red onions
Sumac
Chili flakes
Mashed Chickpeas:
1 x 400g tin Biona Chickpeas
1 tbsp Biona Whole Sesame Tahini
1 tbsp Biona Apple Cider Vinegar
2 tsp soy sauce
1 tsp chili oil
1 finely chopped spring onion
Toppings:
Cucumber
Kimchi
Black sesame seeds
Method
Edamame Spread: Blend edamame beans, tahini, water, lime juice, coriander and salt & pepper together until smooth.
Spread on toasted Chia & Flax Seed Bread then top with toppings of your choice.
Whipped Tofu: Blend tofu, lemon juice, nutritional yeast, sumac, garlic powder, salt and olive oil together until smooth.
Spread on toasted Chia & Flax Seed Bread then top with toppings of your choice.
Mashed Chickpeas: Mash chickpeas, tahini, ACV, soy sauce, chilli oil and spring onion together.
Spread on toasted Chia & Flax Seed Bread then top with toppings of your choice.
