Vegan Peanut Butter Rolos

Made with soft medjool dates and organic peanut butter, these vegan rolos are deliciously sweet and moreish. Perfect for when the mid-afternoon slump hits.
Ingredients
200g pitted soft Medjool dates
1/2 tbsp Biona Organic peanut butter (or other nut or seed butter)
Pinch of fine grain sea salt
150g vegan dark chocolate
1 tsp Biona Organic coconut oil
Chia seeds (optional)
Method
- Process dates with nut butter until a sticky paste forms.
- Chill date mixture in freezer for 10 minutes, then shape into about 18 small balls.
- Freeze balls again for 10 minutes. Meanwhile, melt chocolate with coconut oil.
- Dunk each chilled ball into chocolate. Tap off excess. Sprinkle with chia and stick with toothpick.
