Easy Vegan French Toast

250ml unsweetened soy milk (or other non-dairy milk)

120g cornstarch

1 tsp ground flaxseeds 

½ tsp baking powder

1 tsp ground cinnamon

2 tsp Biona Pure Amber Maple Syrup

1 tsp vanilla extract

6 slices of sourdough bread 

2 tsp of Biona Raw Virgin Coconut Oil, for frying (+ 1 tsp for melting the chocolate)

170g Lindt Plant-Based Chocolate

Strawberries, sliced, for topping

Sprinkle of icing sugar, for topping


  1. Combine the soy milk, cornstarch, flaxseeds, baking powder, cinnamon, maple syrup and vanilla extract; whisk until smooth.

  2. Dip the slices of sourdough bread into the milky mixture until fully coated.

  3. Heat a saucepan over a medium-high heat and add the coconut oil. Once hot, add the dipped bread and cook for 2-3 minutes on each side.

  4. Meanwhile, break up the chocolate and add to a microwave-safe bowl with 1 tsp of coconut oil. Place in the microwave at 10s intervals, stirring each time, until fully melted.

  5. Plate up your golden French toast. Top with sliced strawberries, drizzle with the Lindt vegan chocolate and sprinkle with icing sugar. A perfectly indulgent plant-based breakfast to start your day on a sweet note!
