Easy Vegan Chocolate Peanut Butter Muffins

Try our recipe for no fuss organic peanut butter chocolate muffins. Using simple ingredients, this easy recipe is perfect for getting the kids involved or quick enough to be whipped up during your lunch break!

Ingredients

120g plain flour

70g Biona Organic coconut sugar

50g cocoa powder

1 tsp baking powder

¼ baking soda

¼ tsp salt

100g vegan chocolate chips

180ml almond milk

160g Biona organic apple puree

65g Biona Organic peanut butter

1tbsp Biona organic apple cider vinegar

1 tsp vanilla extract

Method

  1. Preheat the oven to 180c and line a muffin tray with muffin cases.
  2. Add all of the dry ingredients (except the chocolate chips) to a large mixing bowl and stir with a whisk. Add the wet ingredients and stir to combine. Then fold in the chocolate chips.
  3. Divide the batter between the cases, about 8.
  4. Bake for 25 minutes or until a toothpick comes out clean when inserted into the muffin. Leave to cool slightly then enjoy!
