Easy Spring Chopped Salad
Ingredients
1 can Biona Chickpeas, drained
5-6 Biona Gherkins
Half a jar of Biona Pitted Green Olives In Brine
100g cherry tomatoes, halved
1 red onion, peeled and cut into quarters
1 avocado, pitted and cut into quarters
Bunch of fresh coriander
Drizzle of Biona Extra Virgin Olive Oil
Squeeze of lemon juice
Method
Place the chickpeas, gherkins, green olives, tomatoes, onion, avocado and coriander on a chopping board. Using a large, sharp knife, chop all ingredients together until everything is fine and combined.
Add the chopped salad to a bowl and drizzle with olive oil and lemon juice. This recipe is perfect for meal prepping or adding to a sandwich with a layer of our Smoothest Hummus Ever!
