Sun Dried Tomato and Harissa Pasta
Ingredients
1 x 400g tin of Biona Butter Beans
7 Biona Sun Dried Tomatoes
1 tbsp Biona Extra Virgin Olive Oil
1-3 tbsp Biona Harissa Chilli Relish
Salt and pepper, to taste
Method
Add the butter beans to a food processor along with their liquid. Add the sun-dried tomatoes, olive oil and 1-3 tbsp harissa, depending on how spicy you would like it to be (we used 3 tbsp). Blend until smooth and season with salt and pepper.
Fill a saucepan with water and bring to the boil. Add the pasta and cook for 8-10 minutes or until al dente. Save a mug of pasta water before draining, Pour the pasta back into the saucepan it was cooked in.
Pour the blended sauce into the pan and heat through on a low heat. Add the reserved pasta water gradually until you have a silky sauce.
Serve the pasta onto two plates and garnish with some sun dried tomatoes.
