15 Minute Spicy Vegan Peanut Noodles with Broccoli
Ingredients
1 head broccoli, chopped into florets
125g edamame beans
For the sauce
125g Biona Peanut Butter (you can use smooth or crunchy - we used smooth!)
4 tbsp Biona Tamari Soya Sauce
1 tsp chilli flakes
1 tsp Biona Sriracha Sauce
2 tbsp rice vinegar
1 inch fresh ginger, grated
To garnish
2 tbsp peanuts, chopped
2 fresh red chillies, sliced
2 spring onions, sliced
Method
Bring a large pot of water to a boil and add the noodles, broccoli and edamame beans. Set a timer for 4 minutes.
In a small bowl, combine the peanut butter, tamari, chilli flakes, sriracha, rice vinegar and ginger.
If needed, add a few tbsp of warm water to thin the sauce, then transfer to a saucepan and place over a medium heat.
Once the noodles, broccoli and edamame are cooked, drain and transfer into the peanut sauce. Toss, and sprinkle with spring onions, chopped peanuts and fresh chilli. It’s as simple as that!
