Super Simple Green Coconut Noodle Soup

Serves: 2 Prep: 10_mins Cook: 15-20_mins


1 x 250g pack Biona Wheat Asia Noodles

1 x 400g jar Biona Tempeh

2 x 400ml Biona Green Curry Coconut Milk

150g broccoli, steamed

200g mushrooms

2-3 tbsp Biona Tamari 

Fresh chilli, sliced (to taste)

2 wedges of fresh lime


  1. Boil the noodles according to package instructions.

  2. In a separate pan, gently heat the green curry coconut milk on a low heat.

  3. Meanwhile, add the tamari to a frying pan, and place on a medium heat. Add the tempeh and fry for 10 minutes or until browned, flipping occasionally. After 5 minutes, add the mushrooms. 

  4. Drain the noodles and place them in a bowl. Once the coconut milk is hot, pour it over the cooked noodles. 

  5. Top the soup with the fried tempeh, steamed broccoli, mushrooms, fresh red chillies and a wedge of lime.

  6. Enjoy as a quick, easy and delicious vegan dinner
