Warm from the cold this Veganuary, with our recipe for Thai Coconut Jackfruit Soup. Simply put the ingredients in a blender and heat through in a pan.

Ingredients

1 can Biona Organic Jackfruit, drained

1 1/2 – 1 3/4 cups hot water

1 tablespoon + 2 teaspoons Biona Organic tamari

The juice from 1 lime

1 large clove garlic

1 1/2 – 2 tablespoons chopped fresh ginger

1 can of Biona Organic coconut milk.

Garnishes:

Coriander

Grated carrot

Courgette noodles

Avocado

Method

  1. Blend all ingredients in a high speed blender until smooth. Add up to 1/3 cup extra water if you desire a thinner consistency.
  2. Gently warm in a pan and serve with the garnishes of choice.
