SPICY CORN RIBS

Ingredients

2 corn on cob

1 tablespoon Biona Organic Extra Virgin Olive Oil 

½ teaspoon salt

½ teaspoon garlic powder

½ teaspoon paprika smoked

¼ teaspoon pepper

¼ teaspoon onion powder optional

For the garnish:

1 fresh chilli, finely chopped

Fresh parsley, finely chopped 

Crumbled vegan feta

Drizzle of Biona Organic Extra Virgin Olive Oil 

 

Method

  1. Preheat your oven to 190ºC (170ºC fan-assisted).
  2. Stand the corn up vertically with the wider part against the table, and chop in half, then chop those halves into quarters.
  3. Prepare the seasoning by combining all of the spices and oil in a small bowl and mixing well.
  4. Brush the seasoning over the chopped corn.
  5. Lay the seasoned corn on a parchment-lined baking tray and bake for 25-30 minutes. (Increase this time slightly if you want them super crispy and curly.)
  6. Allow to cool slightly, then top with chilli, parsley,a sprinkle of crumbled feta and a drizzle of olive oil. Serve and enjoy!
