Vegan Corn Fritters

Serves: 18 fritters Prep: 10_mins Cook: 20_mins


Hearty sweetcorn fritters, the perfect savoury breakfast dish. Serve with avocado or a vegan 'facon'  to kickstart your day the right way.


1 tin Biona Organic Sweetcorn, drained

200g Biona Organic Tofu 

1 teaspoon salt

1 teaspoon garam masala

Pinch of chilli powder (optional)

1¼ teaspoon baking powder

½ teaspoon bicarbonate of soda

2 tablespoons lime juice

Small bunch of fresh coriander, finely chopped

1 spring onion, finely chopped

1 large garlic clove, finely grated

110g chickpea flour

60ml unsweetened plant milk, or water

Vegetable oil, for frying


  1. Place all the ingredients, except for the oil in a large mixing bowl.
  2. Mix until smooth and without lumps..
  3. The batter should have a thick but spoonable consistency. Let the batter sit for about 5 minutes for the baking powder and bicarbonate of soda to activate.
  4. Heat up a little oil in the frying pan – the more oil you use, the crispier these will become. 
  5. Place 1 tablespoon of batter per fritter onto the hot oil. Flatten the fritters with the back of a spoon and fry for about 2-3 minutes on one side and 2 minutes on the other side.
  6. Serve with chilli jam, fresh coriander and a lime wedge. Enjoy!
