Easy 3 Bean Salad

This really easy three-bean salad is bursting with the fresh flavours of the Mediterranean. We use a can each of our organic black beans, kidney beans and chickpeas (which you can now find in Tesco) and simply pair it with a garlic and dijon mustard vinaigrette. So simple to make and full of healthy fresh ingredients.
Ingredients
Vinaigrette Dressing 1–2 garlic cloves, minced 1/2 tbsp Biona Organic Dijon mustard 2 tbsp Biona Organic lemon juice 1 tsp Biona Organic coconut sugar 60ml of Biona Organic extra virgin olive oil Salt and black pepper
Method
- In a large mixing bowl, combine the beans, chopped peppers, onions, capers and fresh herbs. Mix using a wooden spoon.
- In a small bowl, add the vinaigrette ingredients. Whisk vigorously to combine.
- Add the vinaigrette to the salad bowl. Toss to coat.
- For best results, cover and refrigerate before serving so that beans soak up the vinaigrette flavours. Give the salad another quick toss before serving.
