Chickpea and Vegetable Tray Bake
Ingredients
2 tbsp Biona Extra Virgin Olive Oil
4 tbsp Biona Sweetcorn
4 slices Biona Rye Bread
400g tin Biona Chickpeas, drained
3 garlic cloves, peeled
1 small cauliflower, leaves included, broken into small florets
1 orange pepper, cubed
2 carrots, peeled and sliced
1 red onion, cubed
2 tsp smoked paprika
2 tsp mixed herbs
1 tsp salt
1 tsp freshly ground black pepper
Method
- Preheat the oven to 220C/200C fan/Gas Mark 7.
- Add the vegetables and chickpeas to a baking tray. Add the olive oil and season with smoked paprika, mixed herbs, salt and pepper. Mix through to evenly coat the veg.
- Roast for 25 minutes. Occasionally, open the oven to toss the mixture and ensure the veg is evenly covered with seasoning and oil.
- Serve with a slice of toasted rye bread and enjoy!
