Chickpea and Vegetable Tray Bake

Serves: 4 Prep: 15_mins Cook: 25_mins


2 tbsp Biona Extra Virgin Olive Oil

4 tbsp Biona Sweetcorn

4 slices Biona Rye Bread

400g tin Biona Chickpeas, drained

3 garlic cloves, peeled

1 small cauliflower, leaves included, broken into small florets

1 orange pepper, cubed

2 carrots, peeled and sliced

1 red onion, cubed

2 tsp smoked paprika

2 tsp mixed herbs

1 tsp salt

1 tsp freshly ground black pepper


  1. Preheat the oven to 220C/200C fan/Gas Mark 7. 
  2. Add the vegetables and chickpeas to a baking tray. Add the olive oil and season with smoked paprika, mixed herbs, salt and pepper. Mix through to evenly coat the veg.
  3. Roast for 25 minutes. Occasionally, open the oven to toss the mixture and ensure the veg is evenly covered with seasoning and oil.
  4. Serve with a slice of toasted rye bread and enjoy!
