Easy Chopped Thai-Inspired Salad
Ingredients
For the salad:
1 red pepper, chopped
1 400g can of Biona Chickpeas, drained
4 spring onions, sliced
Half a purple cabbage, chopped
A bunch of coriander, chopped
3 carrots, peeled and grated
Handful of peanuts, chopped
1 fresh red chilli, sliced
For the dressing:
2 tbsp Biona Smooth Unsalted Peanut Butter
2 cloves garlic, peeled and crushed
1 lime, juiced
1 tbsp Biona Flaxseed Oil
2 tsp Biona Tamari
Method
Combine the dressing ingredients in a small ramekin and whisk.
Add all chopped vegetables, grated carrot, peanuts and chickpeas to a large salad bowl.
Pour over the dressing and toss everything together. It’s as easy as that! A fresh spring salad that’s full of flavour.
