Ingredients
4 tbsp Biona Olive Oil, plus extra for drizzling
1 big onion, finely chopped
3 celery sticks, finely chopped
3 carrots, finely chopped
3 garlic cloves, finely chopped
1 tsp dried oregano
Big jar of Biona Passata
1.5 litres veg stock
400g tin Biona Cannellini Beans, drained and rinsed
400g tin Biona Black Beans, drained and rinsed
2 handfuls of Biona White Macaroni
2 courgettes, diced
3 handfuls of cavolo nero, sliced
Optional - a drizzle of Biona Pesto or serve with pesto toast
Method
1. Heat the olive oil in a large pot then add the onion, celery and carrots with a pinch of salt and pepper for 12-15 minutes until soft and lightly golden.
2. Add the garlic, fry for a minute or two until fragrant then add the oregano and chilli flakes and fry for another minute.
3. Add the passata and simmer for 10 minutes until reduced and thick.
4. Add the stock and beans, bring to the boil then add the pasta and cook for 8 minutes (or according to packet instructions), adding in the courgette and greens for the last couple of minutes.
5. Taste for seasoning then serve with a good drizzle of olive oil and extra chilli flakes if you like.
