Arrabbiata Sauce

Nothing beats homemade fresh pasta sauce. Bring a piece of Italy into your home using this easy-to-follow recipe featuring a spicy and flavourful Arrabbiata sauce. Arrabbiata literally means "angry" in Italian; the name of the sauce refers to the spiciness of the chilli peppers.

Ingredients

For the sauce

4 tbsp Biona Extra Virgin Olive Oil

4 or 5 cloves fresh garlic 

Small bunch of fresh parsley, finely chopped 

1 x 400g tin of Biona chopped tomatoes 

1-2 fresh chillies, finely chopped

1 tsp of sea salt 

3 or 4 large leaves of fresh basil, more to add to each plate, if desired

 

Method

  1. Pour a tablespoon of Biona Extra Virgin Olive Oil into a large saute pan over medium-high heat. Crush the garlic and add it to the oil, add the chopped chillies.
  2. Sauté the garlic and chilli until it just starts to brown, then add the parsley.
  3. Turn the heat up to high. Now add the Biona tinned tomatoes. Stir with a wooden spoon and lower the heat.
  4. Add the salt and continue to simmer at a fast pace, and stir often.
  5. The sauce will thicken quickly and should be ready in about 5 to 7 minutes.
  6. Turn off the heat and add the fresh basil. Add to the your favourite cooked pasta and enjoy!
