Next in our series of local independent stores, we introduce you to Brighton’s stalwart co-op, the eclectic Infinity Foods.
About Infinity Foods
Infinity’s Roots: This year, Infinity Foods celebrates its golden jubilee! Set up as a small shop in 1971, it was the project of a group of passionate foodies. When the founders moved on to other things, the staff formalised the Workers’ Co-operative in 1979. “There are so many good things about working at Infinity. One of the main ones being that we are a Workers’ Co-op with no hierarchy. We're united under our core beliefs of vegetarian, organic and natural quality foods”. Today, the business is made up of a thriving wholefoods shop, bakery and warehouse, all run democratically by its workers. Over the past 50 years, Infinity has become a pillar of the community, supporting local initiatives and providing great quality, organic food in Brighton and beyond. Organic Advocates: Infinity are passionate about products that benefit their customers and the environment.
Their top tips for going organic? Start with one meal! Small swaps, such as Organic Oat Milk instead of dairy and opting for organic cereal at breakfast, will make all the difference to you and the planet. With values that align so naturally, Biona’s quality, organic foods have always been the kind of products Infinity looks for. “We decided to stock Biona for the great tasting, organic food at reasonable prices”. The team found it hard to pick a favourite Biona product, but settled on our delicious Rye Breads for their versatility.

Infinity’s Flapjacks
Infinity’s Flapjacks are a family recipe created for the dairy-intolerant daughter of one of the team. Easy, vegan-friendly and sustaining, these bars are energy and nutrient-packed with Brown Rice Syrup, Coconut Bliss and Coconut Oil. We can confirm they are delicious. Ingredients:
100g Infinity Foods Organic Apricots
100g Infinity Foods Organic Raisins 200ml
Freshly Made Organic Rooibos Vanilla Tea
1tbsp Biona Brown Rice Syrup
3 Organic Carrots
350g Infinity Foods Organic Rolled Oats
1tsp Organic Mixed Spice
Method:

Pre-heat the oven to 180°C.

Soak the dried fruit in hot rooibos tea for 10 minutes.

Add coconut oil and bliss to a saucepan over a low heat and stir until melted.

Add all remaining ingredients to the pan and stir until well mixed.

Pour mixture into a pyrex dish and flatten with the back of a spoon.

Bake for 50 minutes, then allow to cool before cutting into bars.
