Why does black rice dye the water purple?

Black rice contains a flavourless compound called anthocyanin which is responsible for the rice’s deep, dark colour. When you cook black rice, the anthocyanin's pigments are released into the water, which can result in the water turning a bluish or purple colour. This does not impact the taste, nor the quality.
