Healthy Black Bean Burrito Bowls

Brighten up your midweek meals by putting these colourful burrito bowls in your plans. Simply team fresh grilled veggies and fluffy rice with our organic black beans for a nourishing and colourful meal full of punchy flavours. For an added touch, serve with a drizzle of tahini and hot sauce.

Ingredients

1 jar Biona Organic Sweetcorn

1 yellow bell pepper, thinly sliced

1 orange bell pepper, thinly sliced

1 red bell pepper, thinly sliced

1 Large red onion, thinly sliced

1 Tablespoon Biona Organic Extra Virgin Olive Oil

½ tsp salt

½ tsp ground black pepper

1 tin of Biona Organic Black Beans, drained & rinsed

130g Biona Organic Basmati Rice

Chopped Romaine Lettuce

Coriander

 

For the quick salsa:

400g Cherry tomatoes, quartered

1 Small red onion, diced

Small handful of coriander, roughly chopped

1 tbsp Biona Organic Lime Juice

 

Method

  1. Cook the basmati rice according to packet instructions and set aside
  2. Slice the peppers and red onion and place in a large bowl season with the olive oil, salt and ground black pepper. Place on a griddle or shallow fry for 7-10 minutes, tossing occasionally, until charred.

To make the quick salsa:

  1. Add the tomatoes, red onion, coriander, and lime juice to a medium bowl.
  2. Season with 1/4 teaspoon salt. Toss to combine, adding more salt as necessary. Set aside.
To assemble the bowls:
  1. Place a generous spoonful of the rice on the bottom of a bowl.
  2. Top with the grilled veggies, sweetcorn, black beans, quick salsa, chopped romaine lettuce, and some extra coriander and lime wedges as desired.
  3. Enjoy!
