Amy & Theo's Lockdown Banana Bread

Ingredients
5 small ripe bananas (4 mashed, 1 for decoration on top)
250g gluten free plain flour
2 + 1/2 tsp of bicarbonate soda
1 + 1/2 tsp ground cinnamon
180g Biona Coconut Sugar
75g Vegan butter
2 Chia eggs (1 Tbsp chia seeds + 2.5 Tbsp water = a chia egg)
2 tbsp Biona Organic Peanut Butter
Method
- Preheat the oven to 180c and line a loaf tin with greaseproof paper.
- In a large bowl, mash the 4 bananas, then add the coconut sugar, chia eggs, melted vegan butter, peanut butter and beat together using an electric whisk.
- Sift in the flour, bicarbonate of soda and cinnamon and gently fold in.
- Pour the mixture into your prepared tin.
- Slice the 5th banana in half then arrange on top of the cake mix.
- Bake in the oven for 1 hr, until a skewer inserted into the middle comes out clean!
