Amy & Theo's Lockdown Banana Bread

Theo thinks banana bread never gets old.


5 small ripe bananas (4 mashed, 1 for decoration on top)

250g gluten free plain flour

2 + 1/2 tsp of bicarbonate soda

1 + 1/2 tsp ground cinnamon

180g Biona Coconut Sugar

75g Vegan butter

2 Chia eggs (1 Tbsp chia seeds + 2.5 Tbsp water = a chia egg)

2 tbsp Biona Organic Peanut Butter



  1. Preheat the oven to 180c and line a loaf tin with greaseproof paper.
  2. In a large bowl, mash the 4 bananas, then add the coconut sugar, chia eggs, melted vegan butter, peanut butter and beat together using an electric whisk.
  3. Sift in the flour, bicarbonate of soda and cinnamon and gently fold in.
  4. Pour the mixture into your prepared tin.
  5. Slice the 5th banana in half then arrange on top of the cake mix.
  6. Bake in the oven for 1 hr, until a skewer inserted into the middle comes out clean!
