Vegan Rocky Road

Made with our Oaty Granola and coated in creamy chocolate, these rocky road bars make the perfect sweet treat for kids of all ages (adults too!)   We get our re-usable lunchboxes from Elephant Box - the makers of simple, strong and sustainable, BPA free lunchboxes.

INGREDIENTS

  • 160g of Biona Organic melted coconut oil
  • 60g cacao powder
  • 5-6 pitted Medjool dates
  • 1 tsp cinnamon
  • ½ tsp salt
  • 150g Biona Organic Pure Oaty Granola
  • 25g shredded coconut 
  • 25g raisins

METHOD

  • Place the coconut oil, cacao powder, dates, cinnamon and sea salt in a food processor. Blitz until smooth.
  • Mix the granola, shredded coconut and raisins in a bowl. Pour over the cacao-coconut mixture and stir until combined.
  • Spoon the mixture into a lined baking dish and place in the freezer to set for 30 minutes.
  • Remove from freezer and slice. Enjoy immediately or keep in the fridge for up to 2 weeks.
