Thai Coconut Jackfruit Soup

Warm from the cold this Veganuary, with our recipe for Thai Coconut Jackfruit Soup. Simply put the ingredients in a blender and heat through in a pan.

INGREDIENTS

  • 1 can Biona Organic Jackfruit, drained
  • 1 1/2 – 1 3/4 cups hot water
  • 1 tablespoon + 2 teaspoons Biona Organic tamari
  • The juice from 1 lime
  • 1 large clove garlic
  • 1 1/2 – 2 tablespoons chopped fresh ginger
  • 1 can of Biona Organic coconut milk.
  • Garnishes:
  • Coriander
  • Grated carrot
  • Courgette noodles
  • Avocado

METHOD

  • Blend all ingredients in a high speed blender until smooth. Add up to 1/3 cup extra water if you desire a thinner consistency. Gently warm in a pan and serve with the garnishes of choice.
