Fluffy Vegan Pancakes

Top with chocolate spread, caramelised bananas and coconut yogurt or make it savoury and top with spinach, tomatoes, avocado and vegan cream cheese.

  • In a medium bowl, add the flour, coconut sugar, baking powder, and salt, and stir to combine.
  • In a medium bowl or liquid measuring cup, add non-dairy milk, apple cider vinegar, and vanilla, and stir to combine
  • Pour the liquid mixture into the dry mixture and whisk until smooth.
  • Let the batter rest for 5 minutes.
  • Pour about 65g of batter onto a nonstick pan over medium heat.
  • When the top begins to bubble, flip the pancake and cook until golden.
  • Whilst pancakes are cooking, prepare your caramelised bananas for topping. 
  • Slice the bananas into coins and sprinkle with coconut sugar on each side. Melt the butter over medium heat and add in the bananas. 
  • Cook for 3-5 minutes, until they are golden. Flip them and cook for 1 minute longer.
  • Serve pancakes warm with your chocolate spread of choice, caramelised bananas and a dollop of coconut yogurt. Enjoy!
