Arrabbiata Sauce

Nothing beats homemade fresh pasta sauce. Bring a piece of Italy into your home using this easy-to-follow recipe featuring a spicy and flavourful Arrabbiata sauce. Arrabbiata literally means "angry" in Italian; the name of the sauce refers to the spiciness of the chilli peppers.

INGREDIENTS

  • For the sauce
  • 4 tbsp Biona Extra Virgin Olive Oil
  • 4 or 5 cloves fresh garlic 
  • Small bunch of fresh parsley, finely chopped 
  • 1 x 400g tin of Biona chopped tomatoes 
  • 1-2 fresh chillies, finely chopped
  • 1 tsp of sea salt 
  • 3 or 4 large leaves of fresh basil, more to add to each plate, if desired

METHOD

  •  
  • Pour a tablespoon of Biona Extra Virgin Olive Oil into a large saute pan over medium-high heat. Crush the garlic and add it to the oil, add the chopped chillies. Saute the garlic and chilli until it just starts to brown, then add the parsley.
  • Turn the heat up to high. Now add the Biona tinned tomatoes. Stir with a wooden spoon and lower the heat.
  • Add the salt and continue to simmer at a fast pace, and stir often.
  • The sauce will thicken quickly and should be ready in about 5 to 7 minutes.
  • Turn off the heat and add the fresh basil. Add to the your favourite cooked pasta and enjoy!
