Spiced Carrot Cake Energy Balls:
- 3 Medjool dates
- 2 tbsp Biona Organic Apple Puree
- 2 tbsp Biona Organic Date Syrup
- 1 cup wholegrain rolled oats
- 1/4 tsp ground cinnamon
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 1 cup shredded carrots
- 1 cup desiccated coconut
1. In a food processor, add all ingredients and pulse until well combined.
2. Using a heaped tablespoon, roll the mixture into balls.
3. Spread the desiccated coconut out on a plate and coat each ball.
4. Place the balls in the fridge for 2 hours to set, store in an airtight container refrigerated.
