125ml Biona Organic Coconut Milk
Biona Organic Agave Syrup to taste
2 tbsp Chia Seeds
20 pistachio nut kernels - crushed
finely grated zest of 1 lemon
- Place the coconut milk in the fridge the night before.
- In a medium bowl, mix together the coconut milk (solid part only), 1/2 lemon zest and agave syrup.
- Add the chia seeds and stir to combine. Set aside for 15 minutes to thicken.
- Take the blueberries and distribute evenly between 4 glasses.
- Distribute 1/2 the coconut milk mixture evenly between the glasses. Add a layer of crushed pistachio. Add another layer of blueberries to each glass and top with more coconut milk, blueberries, pistachio and lemon zest.
- Serve at room temperature or refrigerate for 30 minutes then serve chilled.
