Ingredients - Serves 4
1 Medium Onion
1 Leek1 Large Red Pepper
2 Sticks Celery
1 Large Carrot
1 Large crown of Broccoli

1 Piece Lemon Grass (chopped)
3 cm Ginger root (chopped)
1 Hot Chilli Pepper (remove stem and finely chop)
3-4 Cloves Garlic
50g Creamed Coconut
1 Lime
500ml Water
A splash of Extra virgin Olive oil

Method

    Finely chop the onion, red pepper,leek, celery and carrot and sauté gently in olive oil – in soup pot. After 3-4 mins add finely chopped Brocolli stir and saute for 3 mins.

     Put the garlic, ginger, chilli and lemongrass in a blender, with the juice and zest of the lime and blend to a paste.
   Add this paste to the onion mixture and stir in.

   Add 500ml water and bring to the boil
    Simmer 5 mins then add creamed coconut
   Blend and season to taste.
